Ingredients

  • 22.75 oz granulated sugar
  • 2 TBSP culinary dried lavender
  • 8 oz unsalted butter (melted)
  • 3.5 oz lavender sugar
  • 8 large eggs
  • 1 ¼ cups fresh lemon juice
  • Zest of 2 lemons
  • 9 oz all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. For the crust, combine granulated sugar, dried lavender, melted butter, lavender sugar, vanilla extract, salt, and flour in a bowl. Mix until crumbly and press into a greased 9×13 inch baking dish. Bake for 20 minutes until lightly golden.
  3. In another bowl, whisk eggs until frothy; add lemon juice, lemon zest, lavender sugar, and flour. Mix until smooth.
  4. Pour the filling over the pre-baked crust and return to the oven for an additional 40 minutes until set in the center.
  5. Cool completely before cutting into squares and dusting with powdered sugar.
