- 2 TBSP culinary dried lavender
- 8 oz unsalted butter (melted)
- 3.5 oz lavender sugar
- 8 large eggs
- 1 ¼ cups fresh lemon juice
- Zest of 2 lemons
- 9 oz all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C).
- For the crust, combine granulated sugar, dried lavender, melted butter, lavender sugar, vanilla extract, salt, and flour in a bowl. Mix until crumbly and press into a greased 9×13 inch baking dish. Bake for 20 minutes until lightly golden.
- In another bowl, whisk eggs until frothy; add lemon juice, lemon zest, lavender sugar, and flour. Mix until smooth.
- Pour the filling over the pre-baked crust and return to the oven for an additional 40 minutes until set in the center.
- Cool completely before cutting into squares and dusting with powdered sugar.
