  • 1 cup granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 4 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 10 ounces lemon curd (store-bought or homemade)
  • Whipped cream, for serving

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Mix graham cracker crumbs with melted butter and sugar; press into the bottom of a springform pan.
  3. In a stand mixer, beat softened cream cheese until smooth. Gradually add sugar, then mix in eggs one at a time.
  4. Stir in lemon juice and zest until combined.
  5. Pour batter over crust; bake in a water bath at 300°F (149°C) for 1 hour and 30 minutes.
  6. Cool gradually in the oven, then refrigerate for at least 8 hours before topping with lemon curd and serving.
