  • 2 large heads of cauliflower, cut into florets
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 2 cups shredded Colby Jack cheese, divided
  • 8 slices bacon, cooked and crumbled
  • 4 green onions, thinly sliced, divided
  • 2 cloves garlic, minced

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Steam cauliflower florets until tender (about 5-7 minutes) and pat dry.
  3. In a large bowl, combine cream cheese, sour cream, 1 cup of Colby Jack cheese, half the bacon, half the green onions, garlic, salt, and pepper.
  4. Fold steamed cauliflower into the cheese mixture until well coated.
  5. Transfer to the baking dish; top with remaining cheese and bacon.
  6. Bake for 20-25 minutes until golden and bubbly.
  7. Cool for 5 minutes before serving; garnish with remaining green onions.
