  • 2 cucumbers, thinly sliced
  • 1 pint cherry or grape tomatoes, halved
  • 1 small red or white onion, thinly sliced
  • 1/4 cup apple cider vinegar or red wine vinegar
  • 2 tbsp extra virgin olive oil
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • Optional: 1/2 tsp red pepper flakes

Instructions

  1. Wash and slice the cucumbers; halve the tomatoes and slice the onion.
  2. In a mixing bowl, whisk together vinegar, olive oil, garlic, salt, and pepper. Add red pepper flakes if desired.
  3. Combine vegetables in a large bowl and pour marinade over them.
  4. Toss gently to coat all ingredients evenly.
  5. Cover and refrigerate for at least 30 minutes; longer if possible for enhanced flavor.
