  • 1/4 cup sundried tomatoes
  • 3 garlic cloves, minced
  • 1/4 cup flour
  • 68 cups chicken broth
  • 6 oz pasta (e.g., Italian small shells)
  • 1 cup heavy whipping cream
  • Fresh spinach and grated Parmesan cheese for garnish

Instructions

  1. In a large soup pot or Dutch oven, heat the olive oil over medium-high heat. Add diced chicken with 1 teaspoon of Italian seasoning, salt, and pepper; cook until browned (4–5 minutes).
  2. Stir in onions, carrots, celery, sundried tomatoes, and garlic; sauté until vegetables are translucent (3–4 minutes).
  3. Sprinkle flour over the mixture and stir; add tomato paste if desired.
  4. Gradually whisk in chicken broth while deglazing the pot.
  5. Bring to boil; add pasta along with remaining seasoning. Cover and simmer for about 20 minutes until chicken is cooked through.
  6. Stir in heavy cream and fresh spinach; let simmer for an additional 5 minutes.
