  • 4 salmon fillets (skin-on or skinless)
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes (oil-packed), chopped
  • 1/4 cup heavy cream
  • 1/4 cup chicken broth
  • 1/4 cup freshly grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the salmon fillets dry and drizzle with olive oil. Season with salt, pepper, thyme, and basil.
  3. In a skillet over medium heat, melt the butter and sauté garlic until fragrant. Add sun-dried tomatoes and cook until softened.
  4. Stir in heavy cream and chicken broth; simmer until thickened. Mix in Parmesan cheese and season to taste.
  5. Place salmon in a baking dish, pour the sauce over it, and bake for 15–20 minutes until the salmon flakes easily with a fork.
