  • 1 pound extra large shrimp, peeled and deveined
  • 12 oz gluten-free penne
  • ½ cup sun-dried tomatoes, diced
  • 1 cup heavy cream
  • 2 cups vegetable broth
  • 2 cups diced spinach
  • 1 cup grated parmesan cheese
  • 2 tablespoons butter
  • Garlic and onion for flavoring

Instructions

  1. Cook the penne according to package instructions until al dente; drain and set aside.
  2. In a mixing bowl, season shrimp with smoked paprika, Italian seasoning, black pepper, and salt.
  3. Heat sun-dried tomato oil in a large skillet over medium heat. Cook seasoned shrimp for about 2 minutes on each side until pink and opaque; remove from skillet.
  4. In the same skillet, melt butter over medium-low heat. Sauté garlic and onion for 2 minutes until fragrant; add sun-dried tomatoes, tomato paste, Italian seasoning, sweet smoked paprika, salt, and dried basil.
  5. Stir in gluten-free flour, then gradually add vegetable broth while stirring continuously. Mix in heavy cream and spinach; cook until thickened.
  6. Add parmesan cheese until melted and smooth.
  7. Toss drained pasta with the sauce and return shrimp to skillet; mix well.
  8. Serve garnished with fresh basil.
