  • 3/4 cup unsalted butter (softened)
  • 1 cup sugar
  • 1 whole egg
  • 1 egg yolk
  • 1 Tbsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 8 oz cream cheese (softened)
  • 1/4 cup sugar (for frosting)
  • Assorted fresh fruit (for topping)

Instructions

  1. In a stand mixer, cream the softened butter and sugar until well combined. Add the egg, egg yolk, and vanilla extract; mix until smooth.
  2. In another bowl, sift together flour, salt, and baking powder. Gradually add this to the butter mixture until just combined. Wrap in plastic wrap and refrigerate for at least one hour.
  3. Preheat oven to 350°F (175°C). Roll out dough to 1/2 inch thick on a floured surface and cut into shapes using cookie cutters. Bake for 9-10 minutes on parchment-lined baking sheets until set.
  4. For the frosting, beat cream cheese with sugar and vanilla until smooth.
  5. Once cookies are cool, spread cream cheese frosting on each cookie and top with assorted fresh fruits.
