  • 150ml (2/3 cup) milk

  • 1 1/2 teaspoons vanilla extract

Instructions

  2. Sift together the flour, baking powder, and salt in a bowl.
  3. In another bowl, cream the softened butter and sugar until light and fluffy.
  4. Gradually add the eggs while mixing on low speed. If curdling occurs, add a spoonful of flour.
  5. Mix in the vanilla extract.
  6. Alternate adding the dry ingredients and milk until just combined.
  7. Pour the batter into the prepared loaf tin and bake for 60-65 minutes or until a skewer comes out clean.
  8. Allow cooling in the tin before transferring to a wire rack.
