- 4 oz cream cheese (softened)
- 2 Tbsp powdered sugar
- 1/3 cup pumpkin puree
- 2 cups graham cracker crumbs
- 1/2 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 2 cups white chocolate chips
- 1–2 tsp coconut oil (optional)
Instructions
- In a mixing bowl or stand mixer, beat cream cheese and powdered sugar until light and creamy (2-3 minutes).
- Mix in pumpkin puree, 1 cup of graham cracker crumbs, pumpkin pie spice, and cinnamon until fully combined. Add remaining graham cracker crumbs and mix again.
- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
- Line a baking sheet with parchment paper. Form tablespoon-sized balls from the chilled dough and place them on the sheet. Refrigerate again for another 30 minutes.
- Melt white chocolate in a microwave-safe bowl in short bursts until smooth.
- Dip each pumpkin ball into the melted chocolate, tapping off excess before placing back on the baking sheet.
- Drizzle any leftover chocolate over the truffles and sprinkle with additional graham cracker crumbs if desired.
- Chill for another 20-30 minutes to set before serving.
