  • 2 cups Heavy Cream
  • 1/2 cup Unsalted Butter
  • 1 teaspoon Vanilla Extract
  • 6 cups Sugar (divided)
  • 1/4 teaspoon Baking Soda
  • 1 1/2 cups Chopped Walnuts or Pecans

Instructions

  1. Lightly grease a 9×13-inch baking dish.
  2. In a heavy-bottomed saucepan, melt 2 cups of sugar over low heat, stirring frequently for about 20 minutes until fully liquefied.
  3. In a large saucepan, combine the remaining 4 cups of sugar and heavy cream and simmer on low heat.
  4. Once the first portion of sugar is melted, pour it into the cream mixture while stirring continuously.
  5. Increase heat to medium and cook until the mixture reaches 244°F (softball stage).
  6. Remove from heat and stir in baking soda until fully blended.
  7. Add butter and vanilla extract; stir until smooth.
  8. Let the mixture cool for 20 minutes before mixing in chopped nuts.
  9. Pour into the prepared baking dish and let cool for 1-2 hours before cutting into squares.
