Ingredients

  • 4 skinless boneless chicken thighs
  • 200g fresh pineapple chunks
  • 2 tbsp chipotle paste
  • 2 tbsp runny honey
  • Juice of 1 lime
  • Tortillas (flour or corn)
  • 2 large garlic cloves
  • 1 1/2 tsp tomato puree
  • 1 tsp salt
  • 1 small shallot
  • small handful fresh coriander, roughly chopped
  • 1 ripe avocado, cubed

Instructions

  1. Preheat your oven to 200 degrees Celsius.
  2. In a medium bowl, whisk together chipotle paste, honey, tomato puree, salt, lime juice, and crushed garlic.
  3. Cut chicken into bite-sized pieces and toss in the marinade until well-coated. Set aside.
  4. Spread marinated chicken and pineapple on a baking tray.
  5. Roast in the oven for 30 minutes until the chicken is cooked through.
  6. Serve with chopped shallots, avocado, and fresh lime wedges wrapped in tortillas.
