  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Fresh parsley for garnish

Instructions

  1. Season chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Brown the chicken on both sides, then set aside.
  2. In the same skillet, sauté onion and garlic until translucent.
  3. Add rice to the skillet and toast for 2-3 minutes.
  4. Pour in chicken broth and heavy cream; bring to a simmer.
  5. Return chicken to the skillet, cover, reduce heat, and simmer for 20-25 minutes until cooked through.
