  • 1 cup shredded carrots
  • 2 cups long-grain white rice (such as Lundberg White Jasmine Rice)
  • 8 cups chicken stock
  • 2 chicken breasts (1 lb), cut into bite-sized pieces
  • Seasoned salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Melt butter in a large pot over medium heat. Add shredded carrots and season with salt and pepper. Cook until tender, about 5-6 minutes.
  2. Stir in the rice, minced onion, minced garlic, and parsley flakes; sauté for 1 minute.
  3. Pour in chicken stock and bring to a boil. Reduce heat to medium-low, cover, and simmer for 15 minutes.
  4. Add seasoned chicken pieces; return to simmer and cook for another 7-10 minutes until chicken is cooked through and rice is al dente.
  5. Stir in remaining butter, adjust seasoning if needed, let sit for 5 minutes before serving.
