  • 12 oz penne pasta

  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 tbsp Cajun seasoning
  • Salt and pepper to taste
  • 1 cup grated Parmesan cheese
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add sliced sausage, onion, and bell pepper; cook until browned (5-7 minutes).
  2. Stir in minced garlic and cook for an additional minute until fragrant.
  3. Add diced tomatoes, chicken broth, heavy cream, Cajun seasoning, salt, and pepper; bring to a boil.
  4. Stir in uncooked penne pasta; reduce heat and simmer for 10-12 minutes until pasta is tender and sauce thickens.
  5. Remove from heat and stir in grated Parmesan cheese until melted. Serve warm.
