  • 1 lb meatballs (beef, pork, or chicken)
  • 12 oz rigatoni or penne pasta
  • 3 cups chicken broth
  • 1 tablespoon Cajun seasoning
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 onion, diced
  • 1 bell pepper, diced

Instructions

  1. In a large pot, heat olive oil over medium heat. Brown the meatballs on all sides and set aside.
  2. Sauté the onion, garlic, and bell pepper in the same pot until softened (about 5 minutes).
  3. Stir in diced tomatoes, chicken broth, Cajun seasoning, and uncooked pasta. Bring to a boil then reduce heat.
  4. Add meatballs back to the pot and cover; simmer until pasta is al dente (10-12 minutes).
