- 1 lb Cajun sausage, sliced
- 1 bell pepper, diced

- 1 can (14.5 oz) diced tomatoes
- 2 cups chicken broth
- 1 cup heavy cream
- 2 tsp Cajun seasoning
- Olive oil
Instructions
- In a large skillet, heat olive oil over medium heat and brown the sliced Cajun sausage for about 5–7 minutes. Remove and set aside.
- In the same skillet, sauté the diced bell pepper, onion, and minced garlic until softened (3–5 minutes).
- Add the diced tomatoes (with juices), chicken broth, heavy cream, Cajun seasoning, and uncooked pasta. Stir well and bring to a boil.
- Reduce heat to low, cover the skillet, and simmer until pasta is al dente (12–15 minutes), stirring occasionally.
- Return the cooked sausage to the skillet and mix well. Season with salt and pepper to taste.
- Serve warm, garnished with chopped parsley if desired.
