  • 1 lb Cajun sausage, sliced
  • 1 bell pepper, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 tsp Cajun seasoning
  • Olive oil

Instructions

  1. In a large skillet, heat olive oil over medium heat and brown the sliced Cajun sausage for about 5–7 minutes. Remove and set aside.
  2. In the same skillet, sauté the diced bell pepper, onion, and minced garlic until softened (3–5 minutes).
  3. Add the diced tomatoes (with juices), chicken broth, heavy cream, Cajun seasoning, and uncooked pasta. Stir well and bring to a boil.
  4. Reduce heat to low, cover the skillet, and simmer until pasta is al dente (12–15 minutes), stirring occasionally.
  5. Return the cooked sausage to the skillet and mix well. Season with salt and pepper to taste.
  6. Serve warm, garnished with chopped parsley if desired.
