Ingredients

  • 5 bone-in chicken thigh fillets (skin removed)
  • 1 onion, chopped
  • 2 large garlic cloves, minced
  • 2 tablespoons butter (or olive oil)
  • 1 ½ cups uncooked white rice
  • 1 ½ cups hot chicken broth
  • 1 ¼ cups hot water

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. In a baking dish, scatter chopped onion and minced garlic. Add butter and bake for 12-15 minutes until softened.
  3. Mix paprika, thyme, garlic powder, onion powder, salt, and pepper in a bowl. Rub this mixture on both sides of the chicken thighs.
  4. Stir in uncooked rice with the baked onion and garlic mixture.
  5. Place seasoned chicken on top of the rice and pour in hot broth and water.
  6. Cover tightly with foil and bake for 30 minutes.
  7. Remove foil and bake uncovered for another 20 minutes until liquid is absorbed and chicken is golden brown.
  8. Let rest for 5 minutes before serving.
