Ingredients
- 5 bone-in chicken thigh fillets (skin removed)
- 1 onion, chopped
- 2 large garlic cloves, minced
- 2 tablespoons butter (or olive oil)
- 1 ½ cups uncooked white rice
- 1 ½ cups hot chicken broth
- 1 ¼ cups hot water
Instructions
- Preheat your oven to 350°F (180°C).
- In a baking dish, scatter chopped onion and minced garlic. Add butter and bake for 12-15 minutes until softened.
- Mix paprika, thyme, garlic powder, onion powder, salt, and pepper in a bowl. Rub this mixture on both sides of the chicken thighs.
- Stir in uncooked rice with the baked onion and garlic mixture.
- Place seasoned chicken on top of the rice and pour in hot broth and water.
- Cover tightly with foil and bake for 30 minutes.
- Remove foil and bake uncovered for another 20 minutes until liquid is absorbed and chicken is golden brown.
- Let rest for 5 minutes before serving.
