  • 6 chicken thighs (bone-in, skinless)
  • 1 ½ cups long-grain rice (e.g., basmati or jasmine)
  • 2 tablespoons olive oil
  • 1 onion (diced)
  • 2 cloves garlic (minced)
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1 ½ cups hot vegetable or chicken stock
  • 1 ¼ cups hot water
  • 1 teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 tablespoons butter, melted
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. In a bowl, mix olive oil, spices, and seasonings. Coat the chicken thighs evenly.
  3. In an 8×12-inch baking dish, combine diced onion, minced garlic, olive oil, hot stock, water, uncooked rice, salt, and pepper.
  4. Place the seasoned chicken on top of the rice mixture.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake uncovered for another 30 minutes until golden brown.
  6. Let rest for 10 minutes before serving.
