Ingredients
- 1 1/2 lb chicken breast
- 2 lb red potatoes
- 1 lb fresh green beans
- 2 T olive oil (for chicken)
- 2 T olive oil (for potatoes)
- 3–4 garlic cloves
- 1/3 c grated parmesan (for chicken)
- 1/3 c breadcrumbs
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F (220°C).
- Line a sheet pan with parchment paper. In a bowl, toss potatoes with olive oil, minced garlic, parmesan, salt, and pepper; spread on one-third of the sheet pan.
- Bake potatoes for 10-15 minutes until slightly tender.
- In the same bowl, mix chicken with olive oil, minced garlic, parmesan, breadcrumbs, salt, and pepper until well coated. Add chicken to the sheet pan after potatoes have baked for about 10 minutes.
- Toss green beans with olive oil, minced garlic, and seasonings; add them to the pan after another 10 minutes of baking.
- Bake everything together for approximately 25 minutes until the chicken reaches an internal temperature of 165°F (74°C) and veggies are tender.
