  • 4 tablespoons butter
  • 2 tablespoons olive oil
  • 1 cup panko breadcrumbs
  • ⅔ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 2 teaspoons Italian seasoning
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper

Instructions

  1. Preheat your oven to 425°F (218°C) and line a baking sheet with parchment paper.
  2. In one shallow bowl, mix melted butter, olive oil, and garlic powder. In another bowl, combine panko breadcrumbs, Parmesan cheese, Italian seasoning, salt, and pepper.
  3. Butterfly the chicken breasts for even cooking. Dredge each cutlet in the butter mixture then coat thoroughly in the breadcrumb mixture.
  4. Place coated cutlets on the baking sheet and bake for about 20 minutes, flipping halfway through until golden brown and cooked through.
