Instructions

- Add the egg and vanilla extract; mix until well combined.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually add dry ingredients to the wet mixture; mix until smooth.
- Scoop out dough (approximately 2 tablespoons) and flatten into discs on the prepared baking sheet.
- Place about 1 teaspoon of jelly in the center of half the discs; top with remaining discs and seal edges firmly.
- Bake for 12–15 minutes until edges are golden; cool on the baking sheet for about 5 minutes before transferring to a wire rack.
