  • 1 lb boneless, skinless chicken thighs, sliced
  • ½ cup sun-dried tomatoes, chopped
  • 1 lb asparagus, trimmed and halved
  • 1 cup cherry tomatoes, halved
  • ¼ cup basil pesto (or to taste)
  • 1 cup uncooked tortellini
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chicken and sun-dried tomatoes; cook until chicken is fully cooked (5-10 minutes). Remove from skillet.
  2. In the same skillet, add asparagus; cook until tender yet crisp (5-10 minutes). Remove from skillet.
  3. Cook tortellini according to package instructions; drain.
  4. Return chicken to skillet, add basil pesto and stir to coat evenly. Cook briefly before adding tortellini and cherry tomatoes; mix gently.
  5. Serve warm, garnished with fresh parsley.
