  • 2 cups All-Purpose Flour
  • 1/2 teaspoon Salt
  • 1/2 cup Granulated Sugar
  • 1/2 pint Fresh Raspberries (or about 1 cup frozen raspberries, thawed)
  • 2 1/4 cups Granulated Sugar
  • 6 Tablespoons All-Purpose Flour
  • 6 Eggs
  • 3 Lemons, juice

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a 9" x 13" baking pan with parchment paper.
  2. Blend raspberries with water until smooth; strain to remove seeds.
  3. Mix butter, flour, salt, and sugar for the crust; press into the pan and bake for 15-20 minutes until golden.
  4. Combine sugar and flour for the filling; whisk eggs and lemon juice separately, then incorporate raspberry puree.
  5. Pour filling over the baked crust and return to the oven for 25-30 minutes until edges are set.
