  • 1/4 cup vegetable oil

  3. For the batter, whisk together flour, baking powder, baking soda, spices, and salt in another bowl. Incorporate softened butter and half of the pumpkin puree until just combined.
  4. In a separate bowl, combine remaining pumpkin puree with eggs, oil, and vanilla; mix well before adding to the flour mixture.
  5. Layer half of the batter in the pan, sprinkle with half of the streusel; repeat layers.
  6. Bake for about 35 minutes; add remaining streusel and bake an additional 10-15 minutes until done.
