  • 2 cups fresh raspberries (plus extra for garnish)
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice (optional)
  • 1 cup heavy whipping cream (chilled)
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract
  • 1 tsp unflavored gelatin powder (optional)
  • 2 tbsp cold water (if using gelatin)

Instructions

  1. In a mixing bowl, combine raspberries with granulated sugar and optional lemon juice. Gently mash until chunky.
  2. In another bowl, whip chilled heavy cream until soft peaks form. Gradually add powdered sugar and vanilla extract; continue whipping until stiff peaks form.
  3. If using gelatin, dissolve it in cold water as per instructions, then mix into the raspberry blend. Fold in half of the whipped cream gently, followed by the remaining whipped cream until just combined.
  4. Spoon mousse into serving glasses and refrigerate for at least 2 hours to set.
  5. Garnish with extra raspberries before serving.
