  • 1 tablespoon (3 teaspoons) neutral oil (like avocado or canola oil)
  • 1 tablespoon butter
  • 2 teaspoons fresh lemon juice
  • ½ cup diced white onion
  • 1 teaspoon neutral oil
  • 3 tablespoons butter
  • Sesame seeds (optional, for garnish)
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Cook the chicken: Heat sesame oil and neutral oil in a skillet over medium-high heat. Add diced chicken and cook until no longer pink. Stir in soy sauce, butter, lemon juice, salt, and pepper. Set aside.
  2. Prepare the fried rice: In the same skillet, sauté onions and mixed vegetables. Push to one side, scramble the eggs on the other side until cooked.
