Instructions

  1. In a mixing bowl, combine chopped or shredded corned beef, sauerkraut, Swiss cheese, cream cheese, and Dijon mustard. Mix until well combined. Refrigerate the mixture for about 30 minutes to firm up.
  2. Scoop out the chilled mixture using a spoon or cookie scoop into 1-inch portions. Roll each portion into balls and place them on a lined baking sheet. Return them to the refrigerator while you prepare for frying.
  3. Prepare three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs. Roll each ball in the flour first, dip it into the beaten eggs next, and finally coat it thoroughly with breadcrumbs.
  4. Heat vegetable oil in a skillet or saucepan over medium heat until it reaches about 350°F (175°C). Carefully add the coated balls in small batches to avoid overcrowding. Fry them for approximately 2–3 minutes or until they are golden brown and crispy on all sides. Drain on paper towels afterward.
