  • 12 oz cremini or button mushrooms, sliced
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter (plus extra)
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth (warmed)
  • 1/2 cup dry white wine
  • 1/2 cup grated Parmesan cheese (plus extra for garnish)
  • Salt and pepper to taste

Instructions

  1. Heat olive oil and 1 tablespoon butter in a large skillet over medium heat. Sauté sliced mushrooms until golden, about 6 to 8 minutes. Remove and set aside.
  2. In the same skillet, cook chopped onion until translucent (about 3 minutes), then add minced garlic and cook for an additional minute.
  3. Stir in Arborio rice and toast for 2 minutes until edges are translucent.
  4. Deglaze with dry white wine; stir until absorbed.
  5. Gradually add warm vegetable broth one ladle at a time, stirring frequently until absorbed before adding more (approximately 18-20 minutes).
  6. Stir in sautéed mushrooms, remaining butter, Parmesan cheese, salt, and pepper; cook for an additional 2 minutes.
  7. Serve immediately garnished with extra Parmesan and parsley if desired.
