  • 600 grams of roast beef
  • Salt and freshly ground pepper
  • 1 tablespoon mustard
  • 4 tablespoons vegetable oil
  • 2 onions
  • A handful of lettuce (arugula or spinach)

Instructions

  1. Rinse the roast beef under cold water, pat dry, and season generously with salt and pepper.
  2. Heat 2 tablespoons of vegetable oil in a cast iron skillet over medium-high heat; sear the roast beef until golden brown on all sides (2–3 minutes per side). Brush with mustard and transfer to a roasting pan.
  3. Preheat oven to 140°C (275°F) and roast beef for about 30 minutes or until desired doneness.
  4. Sauté sliced onions in the same skillet until golden brown; season with salt and pepper.
  5. Rinse and chop the lettuce; toast bread slices until golden brown.
  6. Slice the roast beef thinly against the grain, layer on toasted bread with onions and lettuce, and serve immediately.
