Ingredients
- 1 whole chicken (4–5 pounds)
- 2 tablespoons olive oil
- 1 tablespoon garlic, minced
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- Zest and juice of 2 large oranges
- 1 tablespoon honey
- 1 tablespoon soy sauce
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix olive oil, garlic, thyme, rosemary, orange zest and juice, honey, soy sauce, salt, and pepper to create the marinade.
- Pat the chicken dry and place it in a roasting pan. Rub half the marinade over the skin.
- Stuff the cavity with quartered onion and pour the remaining marinade over the chicken.
- Add chicken broth to the pan and roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C), basting every 20 minutes.
- Allow to rest for 10 minutes before carving.
