Ingredients

  • 3 white onions
  • 5 cloves garlic
  • 3 mixed peppers
  • 500g sweet potatoes
  • 6 salad tomatoes
  • 500g large carrots
  • 5 sprigs fresh rosemary
  • 100ml single cream
  • 800ml vegetable stock
  • Olive oil, salt, pepper, dried sage, Italian herbs

Instructions

  1. Preheat oven to 200°C (390°F).
  2. On a baking tray, combine sliced onions, garlic (skin on), peppers, sweet potatoes, tomatoes, and carrots. Drizzle with olive oil and season with salt, pepper, sage, and Italian herbs. Toss well.
  3. Roast vegetables for about 30 minutes until tender and slightly charred, stirring halfway.
  4. Transfer roasted veggies to a large pot with vegetable stock and fresh rosemary.
  5. Blend until smooth using an immersion blender or regular blender in batches.
  6. Stir in single cream and simmer for an additional 10 minutes to meld flavors.
