Ingredients
- 4 (6 oz) salmon fillets
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon butter
- 3 garlic cloves, minced
- 1 tablespoon all-purpose flour
- 1 1/4 cups heavy cream
- Juice and zest of 1 lemon
- 2 tablespoons chopped fresh dill
- Kosher salt and freshly ground black pepper, to taste
Instructions
- Pat dry the salmon fillets and season both sides with salt and pepper.
- Heat olive oil in a skillet over medium-high heat, then sear the salmon skin-side up for about 5 minutes until golden brown. Flip and cook for another 5 minutes skin-side down.
- Remove salmon from skillet and set aside.
- In the same skillet, melt butter over medium-low heat, add minced garlic, and sauté for about 30 seconds.
- Stir in flour to create a roux, then gradually whisk in heavy cream until thickened (about 3–4 minutes).
- Add lemon zest, juice, and dill; stir to combine.
- Return salmon to skillet, spoon sauce over fillets, and simmer for an additional 2 minutes until warmed through.
