- ½ tsp baking soda
- 1 tsp salt
- ¼ cup canola oil
- 1 can (14.5 oz) cream-style corn
- 3 cups shredded cheddar cheese
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine cornmeal, salt, baking soda, diced jalapenos, and onion.
- In another bowl, whisk together eggs, milk, oil, and cream-style corn until smooth.
- Gradually add the wet mixture to the dry ingredients and stir until just blended.
- Fold in cooked rice and shredded cheddar cheese gently.
- Grease a cast-iron skillet with butter and dust lightly with cornmeal.
- Pour the batter into the skillet and bake for 45–50 minutes until golden brown.
- Allow to cool slightly before slicing.
