  • ½ cup plain Greek yogurt (or sour cream + mayonnaise)
  • 2 tablespoons fresh lime juice
  • 8 small corn or flour tortillas
  • ½ small cabbage, shredded
  • 1 avocado, sliced
  • ¼ cup fresh cilantro, chopped

  • salt
  • black pepper

Instructions

  1. Whisk together the sauce ingredients: Greek yogurt, lime juice, sriracha, garlic powder, smoked paprika, and salt. Adjust consistency with water if needed.
  2. Season the shrimp with smoked paprika, garlic powder, oregano, onion powder, salt, and pepper.
  3. Heat olive oil in a nonstick skillet over medium heat. Cook shrimp for about 2 minutes per side until pink and cooked through.
  4. Warm tortillas in a skillet or microwave.
  5. Assemble by filling tortillas with shredded cabbage, avocado slices, cooked shrimp, sauce drizzle, cilantro, and Cotija cheese.
