- 2 ½ pounds stew meat
- 4 cups beef broth
- 1 cup red wine (cabernet sauvignon or merlot)
- 5 medium carrots, chopped
- 1 lb baby Yukon gold potatoes, halved
- 2 cups yellow onions, diced
- 4 cloves garlic, minced
- Olive oil
- Flour
- Worcestershire sauce
- Tomato paste
- Bay leaves
- Rosemary
Instructions
- Cut the stew meat into 1-inch cubes and season with black pepper, garlic salt, celery salt, and flour.
- Brown the seasoned meat in olive oil in a skillet over medium-high heat; transfer to the slow cooker.
- Sauté onions and garlic in the same skillet until softened; add a splash of wine to deglaze and then transfer to the slow cooker.
- Add all remaining ingredients (except peas) to the slow cooker and mix well.
- Cook on low for 7½ to 8 hours or on high for about 3½ to 4 hours until tender.
- Stir in frozen peas during the last 15 minutes of cooking.
