Ingredients

  • 2 ½ pounds stew meat
  • 4 cups beef broth
  • 1 cup red wine (cabernet sauvignon or merlot)
  • 5 medium carrots, chopped
  • 1 lb baby Yukon gold potatoes, halved
  • 2 cups yellow onions, diced
  • 4 cloves garlic, minced
  • Olive oil
  • Flour
  • Worcestershire sauce
  • Tomato paste
  • Bay leaves
  • Rosemary

Instructions

  1. Cut the stew meat into 1-inch cubes and season with black pepper, garlic salt, celery salt, and flour.
  2. Brown the seasoned meat in olive oil in a skillet over medium-high heat; transfer to the slow cooker.
  3. Sauté onions and garlic in the same skillet until softened; add a splash of wine to deglaze and then transfer to the slow cooker.
  4. Add all remaining ingredients (except peas) to the slow cooker and mix well.
  5. Cook on low for 7½ to 8 hours or on high for about 3½ to 4 hours until tender.
  6. Stir in frozen peas during the last 15 minutes of cooking.
