  • 1 1/2 pounds boneless skinless chicken breasts
  • 2 teaspoons minced garlic
  • 2 teaspoons minced ginger
  • 1/4 cup honey
  • 3 tablespoons brown sugar
  • 1/2 cup low sodium soy sauce
  • 2 teaspoons toasted sesame oil
  • 2 tablespoons rice vinegar

Instructions

  1. Place chicken breasts in the slow cooker.
  2. In a bowl, whisk together garlic, ginger, honey, brown sugar, soy sauce, sesame oil, and rice vinegar.
  3. Pour the sauce over the chicken.
  4. Cover and cook on HIGH for 3 hours or LOW for 5–6 hours until tender.
  5. Shred the chicken with two forks.
  6. Strain remaining sauce into a saucepan and heat until simmering.
  7. Mix cornstarch with cold water until dissolved; add to simmering sauce to thicken.
  8. Combine shredded chicken with thickened sauce; toss well to coat.
