  • 3/4 cup (150g) packed light or dark brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1 large egg, at room temperature
  • 2 teaspoons pure vanilla extract
  • 2 cups (250g) all-purpose flour, spooned & leveled
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (135g) white chocolate chips, plus a few extra for garnish
  • 1 cup (140g) dried cranberries, plus a few extra for garnish

Instructions

  1. Preheat your oven to 350°F (177°C) and line baking sheets with parchment paper.
  2. In a bowl, beat softened butter with brown and granulated sugars until creamy. Add the egg and vanilla; mix well.
  3. In another bowl, whisk together flour, cornstarch, baking soda, and salt. Gradually combine with wet ingredients.
  4. Fold in white chocolate chips and cranberries until evenly distributed.
  5. Chill the dough for at least 1 hour before scooping into balls on prepared baking sheets.
  6. Bake for 11-12 minutes until edges are golden but centers remain soft.
  7. Allow cooling briefly before transferring to a wire rack.
