  • 1⅓ cups warm water (300 grams)
  • 1/4 cup granulated sugar (56 grams) or honey
  • 4 cups bread flour (500 grams)
  • 1½ tablespoons olive oil (20 grams)
  • 2 teaspoons fine salt (9 grams)

Instructions

  1. In a large mixing bowl, combine the sourdough starter, warm water, and sugar until dissolved.
  2. Stir in the flour, olive oil, and salt until a thick dough forms.
  3. Allow the dough to rest for 30 to 45 minutes covered with a damp towel.
  4. After resting, stretch and fold the dough for several minutes before letting it rise at room temperature for 4 to 12 hours.
  5. Shape the dough into a log and place in a greased loaf pan. Let it rise until doubled in size (1-2 hours).
  6. Preheat your oven to 375ºF and bake for about 40 minutes until golden brown.
  7. Cool on a rack for at least an hour before slicing.
