Ingredients
- 0.75 lb boneless, skinless chicken breasts
- ¼ cup lime juice
- 4 large tortillas
- 1 small red bell pepper, chopped
- 1 jalapeño, diced
- 1 cup black beans
- ¾ cup corn kernels
- ¼ cup cotija cheese
- Fresh cilantro for garnish
Instructions
- Marinate the diced chicken in lime juice, olive oil, and spices for at least 15 minutes.
- Cook rice according to package instructions.
- Sauté marinated chicken in a skillet over medium heat until cooked through (12–15 minutes). Remove from skillet.
- In the same skillet, sauté bell pepper, jalapeño, and onion until tender. Add minced garlic and return chicken to warm through.
- Assemble wraps by layering rice, chicken mixture, black beans, corn, and cotija cheese on each tortilla. Drizzle with sauce if desired.
- Roll tightly like a burrito and serve immediately.
