  • 0.75 lb boneless, skinless chicken breasts
  • ¼ cup lime juice
  • 4 large tortillas
  • 1 small red bell pepper, chopped
  • 1 jalapeño, diced
  • 1 cup black beans
  • ¾ cup corn kernels
  • ¼ cup cotija cheese
  • Fresh cilantro for garnish

Instructions

  1. Marinate the diced chicken in lime juice, olive oil, and spices for at least 15 minutes.
  2. Cook rice according to package instructions.
  3. Sauté marinated chicken in a skillet over medium heat until cooked through (12–15 minutes). Remove from skillet.
  4. In the same skillet, sauté bell pepper, jalapeño, and onion until tender. Add minced garlic and return chicken to warm through.
  5. Assemble wraps by layering rice, chicken mixture, black beans, corn, and cotija cheese on each tortilla. Drizzle with sauce if desired.
  6. Roll tightly like a burrito and serve immediately.
