  • 8 grams salt

  1. In a large mixing bowl, combine water, sourdough starter, and salt. Stir to mix well. Add flour and mix until incorporated. Cover and let the dough rest for 30 minutes.
  2. Perform stretch and folds every 20 minutes for one hour (4 sets total).
  3. Allow the dough to bulk ferment for 3-4 hours until nearly doubled in size.
  4. Shape the dough into a tight ball and place it seam-side up in a floured basket. Let proof for another 2 hours.
  5. Preheat your oven to 460°F (238°C) with the Dutch oven inside.
  6. Score the dough and transfer it to the preheated Dutch oven on parchment paper. Bake covered for 30 minutes, then uncovered for an additional 10 minutes.
  7. Cool on a rack before slicing.
