Instructions

  1. In a large bowl, mix water, sourdough starter, and salt until well combined. Add flour and mix until incorporated.
  2. Cover the dough and let it rest for 30 minutes.
  3. Perform stretch and folds every 20 minutes for an hour.
  4. Let the dough rise at room temperature for 3-4 hours until nearly doubled in size.
  5. Shape the dough into a ball and place it seam-side up in a floured banneton basket. Let it rise for another 2 hours.
  6. Preheat your oven to 460°F (238°C) with a Dutch oven inside.
  7. Score the dough and transfer it to the preheated Dutch oven. Bake covered for 30 minutes, then uncover and bake for an additional 10 minutes.
  8. Cool on a rack before slicing.
