  • 1 tablespoon Olive Oil
  • 8 oz Sliced Mushrooms
  • 3 Cloves Garlic, minced
  • 4 cups Baby Spinach
  • 1/4 cup Grated Parmesan Cheese
  • Salt and Black Pepper to taste
  • Red Pepper Flakes (optional)
  • Fresh Parsley (optional)

Instructions

  1. Cook the orzo: Boil salted water, add orzo, and cook until al dente. Drain and set aside.
  2. Sauté vegetables: Heat olive oil in a large skillet over medium heat. Add sliced mushrooms and cook for 5–7 minutes until browned. Stir in garlic and cook for an additional 1–2 minutes.
  3. Add spinach: Incorporate baby spinach into the skillet and cook until wilted, about 2–3 minutes.
  4. Combine: Toss the cooked orzo into the skillet with the mushroom-spinach mixture. Remove from heat and sprinkle with Parmesan cheese; season with salt and pepper to taste.
