  • 2 cups finely diced onion
  • 1 cup finely diced carrot
  • 1 cup finely diced celery
  • 1 tablespoon minced garlic
  • 1 tablespoon Italian seasoning
  • 1.5 teaspoons ground cumin
  • 1 teaspoon dried thyme
  • 1.5 cups green split peas
  • 8 cups reduced-sodium chicken broth
  • 1 meaty ham bone

Instructions

  1. Heat olive oil in a large heavy-bottomed pot. Sauté onion, carrot, celery, salt, and pepper until softened, about 5–8 minutes.
  2. Add garlic and spices; cook for another minute. Stir in rinsed split peas.
  3. Add ham bone and chicken broth; bring to a boil, then simmer uncovered for 60–90 minutes until peas are tender.
  4. Remove the ham bone, shred the meat back into the soup, blend part of the soup for creaminess, then mix it back in.
  5. Adjust seasoning before serving hot with bread.
