  • 16 ounces mushrooms (cleaned and trimmed)
  • 1 tablespoon olive oil
  • 2 tablespoons butter (divided)
  • 6 cloves garlic (minced)
  • 1 teaspoon kosher salt
  • 1½ teaspoons Worcestershire sauce
  • 1½ teaspoons soy sauce
  • ½ teaspoon paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon dried tarragon
  • ½ teaspoon black pepper
  • ¼ teaspoon chili powder
  • ½ teaspoon browning sauce (optional)
  • Fresh chives (chopped)

Instructions

  1. Clean the mushrooms with a damp cloth and trim stems.
  2. Heat a skillet over medium heat and add olive oil and 1 tablespoon of butter.
  3. Once melted, add the mushrooms and sprinkle with kosher salt; cook undisturbed for 3 minutes to sear.
  4. Combine garlic and spices in a small bowl; add to skillet and cook for another 1–2 minutes until fragrant.
  5. Stir in Worcestershire and soy sauces; let cook for 2–3 minutes until reduced.
  6. Add remaining butter and stir until melted.
  7. Garnish with fresh chives and serve warm.
