  • 1 and 2/3 cup heavy cream-chilled
  • about 1/3 cup powdered sugar (to taste)
  • 1 teaspoon vanilla
  • 3 cups graham cracker crumbs
  • ½ cup + 2 tablespoons unsalted butter-melted
  • ¼ cup strawberry jam
  • Red gel food coloring
  • ½ cup unsalted butter-softened
  • 8 oz. cream cheese-softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla
  • 2/3 cup diced fresh strawberries
  • 2 (3 oz. pkg.) berry blue Jello (or other flavor to your taste)
  • 1 and 1/4 cup boiling water
  • 2 cups blueberry pie filling
  • 1 cup of canned crushed pineapple-drained from juice
  • 2 ½ cups whipped cream
  • Fresh strawberries halved
  • Fresh blueberries
  • ¼ cup chocolate chips

Instructions

  1. For the crust, mix graham cracker crumbs with melted butter and strawberry jam. Press firmly into a 9×13 inch baking dish.
  2. In a bowl, beat heavy cream with powdered sugar and vanilla until stiff peaks form. Fold in diced strawberries and spread over the crust.
  3. Blend softened cream cheese with butter and powdered sugar until smooth. Fold in whipped cream and layer on top of the strawberry mixture.
  4. Dissolve berry blue Jello in boiling water, let cool slightly, then pour over the cheesecake layer. Refrigerate until set.
  5. Top with blueberry pie filling, crushed pineapple, fresh strawberries, blueberries, whipped cream, and chocolate chips.
