Ingredients
- 400g strawberries
- 300g raspberries
- 300g cherries
- 2tsp icing sugar
- 250g Madeira cake
- strawberry jam
- 500g custard
- 300ml double cream
- 4tbsp raspberry or berry liqueur (optional)
Instructions
- Prepare the berries by hulling the strawberries and mixing them with raspberries and cherries in a bowl with icing sugar.
- Cut the Madeira cake into slices, spreading strawberry jam between two slices to create small sandwiches before cutting them into cubes.
- In a trifle bowl, layer the cake cubes at the bottom and drizzle with optional liqueur. Add the berry mixture on top.
- Pour custard over the fruit layer and then gently spoon whipped cream on top.
- Finish by garnishing with additional fresh berries just before serving.
