  • 1 cup old-fashioned rolled oats
  • 1/2 cup oat flour
  • 1/2 cup dried cranberries or other dried fruit
  • 1/2 cup pumpkin seeds or nuts
  • 1/4 cup ground flaxseed
  • 1 tablespoon chia seeds
  • 1 ripe banana or 1/2 cup unsweetened applesauce
  • 3 tablespoons melted coconut oil or butter
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons almond milk or other milk of choice

Instructions

  1. Preheat your oven to 325ºF (163ºC) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine oats, oat flour, dried fruit, pumpkin seeds, flaxseed, chia seeds, cinnamon, baking powder, and salt.
  3. Stir in the mashed banana (or applesauce), melted coconut oil (or butter), liquid sweetener, and almond milk until well mixed.
  4. Let the mixture rest for 4–5 minutes to bind.
  5. Scoop dough onto the prepared baking sheet using a scant 1/4 cup measure; flatten slightly.
  6. Bake for 15–18 minutes until edges are lightly golden.
  7. Cool on the pan briefly before transferring to a wire rack.
