  • 1 cup pineapple chunks
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup apple cider vinegar
  • 1 tablespoon minced garlic
  • 1 tablespoon grated ginger
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Place chicken breasts in the bottom of the crockpot.
  2. Add pineapple chunks on top.
  3. In a bowl, mix soy sauce, brown sugar, apple cider vinegar, garlic, ginger, and red pepper flakes until combined.
  4. Pour the mixture over chicken and pineapple.
  5. Cook on low for 4-6 hours until chicken is tender.
  6. Shred the chicken using forks and discard excess fat.
  7. Mix cornstarch with water; stir into sauce in the crockpot.
  8. Cook on high for an additional 10-15 minutes for sauce thickening.
  9. Return shredded chicken to the pot and mix well before serving.
