Ingredients

  • 1 pound rotini pasta
  • 1 pound lean ground beef
  • 1 packet taco seasoning
  • 15 ounces black beans (drained and rinsed)
  • 8 ounces canned corn (drained)
  • 2 cups cherry tomatoes (halved)
  • 16 ounces Catalina dressing
  • 3 tablespoons sour cream
  • Nacho Cheese Doritos (for topping)

Instructions

  1. Cook rotini in a large pot of boiling water until al dente; drain and rinse with cold water.
  2. In a skillet over medium heat, brown the ground beef; drain excess grease and mix in taco seasoning with water, cooking until liquid evaporates.
  3. In a large mixing bowl, combine cooked pasta, seasoned beef, black beans, corn, cherry tomatoes, and shredded cheese.
  4. In a separate bowl, whisk together Catalina dressing and sour cream; pour over pasta mixture and mix well.
  5. Fold in crushed Doritos and lettuce just before serving.
